1Heat oven to 500°F. Line small cookie sheet with foil. In small bowl, combine chopped vegetables and oil; toss to coat. Spread on foil-lined cookie sheet. Bake at 500°F. for 15 to 20 minutes or until vegetables are browned and tender, stirring once or twice. Reduce oven temperature to 350°F.
2Meanwhile, in large saucepan, bring water and butter to a boil. Cook until butter is melted. Remove from heat. Stir in roasted vegetables and stuffing mix; toss gently to mix.
3Use to stuff turkey, or place in greased 12x8-inch (2-quart) glass baking dish; bake at 350°F. for 20 to 25 minutes or until thoroughly heated.
