Red Wine-Braised Short Ribs

Ingredients

  • 1 1/2 cups dry red wine or beef broth
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 3 tablespoons soy sauce
  • 5 sprigs fresh thyme
  • 4 lb beef short ribs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon canola oil
  • 4 large carrots, cut diagonally into 1 1/2-inch slices
  • 2 medium red onions, each cut into 6 wedges
  • Additional fresh thyme sprigs, if desired

    Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix wine, ketchup, brown sugar and soy sauce. Add 5 thyme sprigs.

    Sprinkle ribs with salt and pepper. In 12-inch skillet, heat oil over medium-high heat. Add half of the ribs; cook about 8 minutes until brown on all sides. Remove from skillet and add to slow cooker. Repeat with remaining ribs. Place carrots and onions over ribs in slow cooker.

    Cover; cook on Low heat setting 8 hours or until meat and vegetables are tender. Garnish with additional thyme.

  • Serve these hearty ribs over mashed potatoes.
