cup shredded carrots

cup finely chopped onion

tablespoon chopped fresh chives

tablespoons all-purpose flour

    Heat 1/4 inch oil in heavy skillet over medium-high heat. Meanwhile, in medium bowl, combine potatoes and remaining ingredients; mix well.

    Using about 1/3 cup mixture for each, form 9 patties 3 to 4 inches in diameter. Cook 2 to 3 minutes on each side or until lightly browned. Drain on paper towels. Serve immediately.
