Ingredients

roll (16.5 oz) Pillsbury™ refrigerated peppermint sugar cookies
1
box (18.3 oz) milk chocolate brownie mix
Water
Vegetable oil
Eggs

tablespoons powdered sugar, if desired

Steps

  • 1 Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. Cut cookie dough in half crosswise; cut each section in half lengthwise. Press dough in bottom of pan.
  • 2 Make brownie batter as directed on box for 13x9-inch pan, using water, vegetable oil and eggs; spread batter over cookie dough.
  • 3 Bake as directed on brownie box; cool. For bars, cut into 6 rows by 4 rows; dust with powdered sugar before serving.

Expert Tips

To add even more peppermint flavor as well as crunch to finished bars, unwrap and crush 24 hard round peppermint candies; after pressing cookie dough in pan, sprinkle with crushed candies, then continue with recipe as directed.

These Peppermint Brownie Bars make the perfect base for brownie sundaes. For a truly decadent dessert, top each bar with a scoop of vanilla ice cream and drizzle with some hot fudge topping.
