Grill the peppery thighs up to two days in advance of serving and refrigerate. At serving time, reheat the chicken in the microwave oven, or slice it cold for sandwiches.
Cut leftover chicken into chunks and use it in your favorite chicken salad recipe for a spicer version.
With any spicy meal, serve bread or rice to soak up the heat--it's actually more effective than a glass of water, which spreads the pepperiness around inside the mouth. This chicken would be especially good with refried beans and yellow rice, coleslaw and sliced tomatoes. To bring the meal to a cool conclusion, scoop fruit-flavored sorbet into dishes of fresh fruit salad.
