Onion-Chive Muffins

Ingredients

cup refrigerated or frozen fat-free egg product, thawed, or 1 egg, slightly beaten

    Heat oven to 375°F. Grease bottoms only of 12 muffin cups or line with paper baking cups. Spray small skillet with nonstick cooking spray. Add onions; cook and stir over medium heat until crisp-tender. Set aside.

    In large bowl, combine flour, chives, sugar, baking powder, salt and baking soda; mix well. In small bowl, combine cooked onions, buttermilk, oil and egg product; blend well. Add to flour mixture; stir just until dry ingredients are moistened. Fill greased muffin cups about 3/4 full.

    Bake at 375°F. for 12 to 14 minutes or until toothpick inserted in center comes out clean. (Muffins will be very light in color). Immediately remove from pan. Serve warm.

Expert Tips

  • * To substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus milk to make 1 cup.
  • Choose onions that have firm, taut skins and no soft spots. At home, store onions in a cool, dark place where air can circulate - not in the refrigerator and not in a plastic bag, which can trap moisture that spoils onions. Do not store onions with potatoes, which have different humidity requirements and will hasten decay.
  • To chop an onion efficiently, cut it in half through the stem end and pull of the brown peel. Place the onion and the work surface, cut side down, and make a series of cut about 1/4 inch apart, not quite cutting through to the stem. Then, give the onion 1/4 turn and make another series of cuts, resulting in a "crosshatch" of cuts. Next, lay the onion on its side and slice it to make the crosshatch into little pieces.
