Mixed Seafood Grill

Ingredients

  • 2 tablespoons butter, melted
  • 1 teaspoon lemon-pepper seasoning
  • 1/2 teaspoon fennel seed, crushed
  • 1/4 teaspoon salt
  • 1 lb. halibut, cut into 1 1/4 to 1 1/2-inch pieces
  • 1 lb uncooked deveined peeled extra-large shrimp (16 to 20 shrimp), with tails left on

    Heat grill. In large bowl, combine butter, lemon-pepper seasoning, fennel seed and salt; mix well. Add halibut and shrimp; toss to coat. Place in grill basket.

    When ready to grill, place basket on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 5 to 10 minutes or until fish flakes with fork and shrimp turn pink.

  • Can’t find halibut for this Mixed Seafood Grill? Other thick, firm white fishes such as cod, mahi mahi and snapper make excellent substitutes.
  • Like a little heat? Add 1/2 teaspoon red pepper flakes to the butter mixture.
  • For a pretty presentation, top your finished seafood mixed grill with chopped fresh parsley and serve with lemon wedges.
