Lemony Herb Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup sugar
  • 1/4 cup chopped fresh chives
  • 3 teaspoons baking powder
  • 2 teaspoons grated lemon peel
  • 3/4 teaspoon dried basil or oregano leaves
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup margarine or butter, melted
  • 1 egg, slightly beaten

    Heat oven to 400°F. Grease 12 muffin cups or line with paper baking cups. In large bowl, combine all-purpose flour, whole wheat flour, sugar, chives, baking powder, lemon peel, basil and salt; mix well.

    Add milk, margarine and egg; stir just until dry ingredients are moistened. Fill greased muffin cups 2/3 full.

    Bake at 400°F. for 13 to 18 minutes or until toothpick inserted in center comes out clean. Immediately remove from pans. Serve warm.
