Ingredients

lb. ground lamb

medium onion, chopped (1/2 cup)

medium carrot, thinly sliced

garlic cloves, minced
1 1/2
teaspoons dried oregano leaves
1/2
teaspoon lemon-pepper seasoning
1/2
cup finely chopped green bell pepper
1
(14 1/2-oz.) can ready-to-serve fat-free chicken broth with 1/3 less sodium
1/2
cup water
1
(10-oz.) pkg. (about 1 1/3 cups) uncooked couscous

    Heat large nonstick skillet over medium-high heat until hot. Add ground lamb, onion, carrot, garlic, oregano and lemon-pepper seasoning; cook until lamb is no longer pink and onion is tender. Remove lamb mixture from skillet; drain on paper towels.

    Wipe skillet dry with paper towels. Return lamb mixture to skillet. Add all remaining ingredients; mix thoroughly. Bring to a boil. Reduce heat; cover and simmer 5 to 10 minutes or until couscous is tender and most of liquid is absorbed. Fluff with fork before serving.
