Jerk Chicken with Black-Eyed Peas and Rice

boneless skinless chicken breast halves

teaspoon dry Caribbean jerk seasoning

(15-oz.) can black-eyed peas, drained, rinsed

    Cook rice in water as directed on package.

    Heat grill. Sprinkle jerk seasoning over chicken breast halves.
  • 3
    When ready to grill, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 12 to 15 minutes or until chicken is fork-tender and juices run clear, turning once.

    Add black-eyed peas and cumin to rice; mix well. Serve chicken over rice mixture with lime wedges.

  • To broil chicken, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.
  • Jerk seasoning has been used in Jamaica since the 17th century, when it first flavored wild boar. The seasoning is a moist or dry blend of chiles, thyme, cinnamon, ginger, allspice, cloves, garlic and onions. Look for jerk seasoning in the spice or condiment section of the grocery store.
  • One and a half cups of instant rice can be used in place of one cup of long grain rice. Cook it according to package directions.
  • Dried peas, lentils and beans such as black-eyed peas are staple source of protein in diets around the world. They are virtually fat-free and are high in soluble fiber, a nutrient which may reduce the risk of some cancers and heart disease.
