Ingredients

Burgers

  • 1 lb. lean ground beef
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1 egg, beaten

Topping and Bread

  • 1 medium zucchini, sliced
  • 1 cup sliced fresh mushrooms
  • 2 tablespoons purchased Italian salad dressing
  • 4 slices Italian bread
  • 2 Italian plum tomatoes, sliced
  • 4 (1 1/2-oz.) slices mozzarella cheese, halved crosswise

    GRILL DIRECTIONS: Heat grill. Cut 16x12-inch sheet of heavy-duty foil; spray foil with nonstick cooking spray. In medium bowl, combine all burger ingredients; mix well. Shape mixture into 4 patties, 1/2 inch thick.

    In another medium bowl, combine zucchini, mushrooms and salad dressing; toss to coat.

    When ready to grill, place sprayed foil on grill. Spoon vegetables onto sprayed foil. Place patties next to foil on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 11 to 13 minutes or until vegetables are tender and burgers are thoroughly cooked, stirring vegetables and turning burgers once during cooking.

    Meanwhile, toast or grill bread slices; place on individual serving plates.

    Top each burger on grill with tomato slices and cheese. When cheese is melted, place each topped burger on bread slice. Top with vegetables.

  • To broil burgers and vegetables, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning burgers once and stirring vegetables occasionally. Top each burger with tomato and cheese, broil an additional 2 to 3 minutes or until cheese is melted.
  • Hamburger buns can be used in place of the Italian bread slices. Layer each burger with toppings inside one bun.
  • Double the burger recipe and shape and wrap the patties for the freezer. Then, you’ll have a start on two summer meals. The frozen burgers can be placed on the grill but will need additional cooking time to thoroughly cook them.
  • Pasta salad from the deli is a perfect accompaniment to these open-faced sandwiches. Melon wedges and lemonade complete the summer meal.
