Ingredients

cup chopped onions

garlic clove, minced

cups purchased coleslaw blend (from 16-oz. pkg.)

(16-oz.) cans diced beets, drained

(14 1/2-oz.) cans ready-to-serve beef broth
1
(14.5-oz.) can diced peeled tomatoes, undrained
1/3
cup red wine vinegar

cups water
1/2
cup sour cream
1/4
cup chopped fresh dill

    Heat oil in Dutch oven or stockpot over medium heat until hot. Add onions and garlic; cook and stir 2 minutes or until tender. Add coleslaw blend; cook over low heat 1 to 2 minutes or until cabbage wilts, stirring occasionally.

    Add all remaining ingredients except sour cream and dill. Bring to a boil. Reduce heat to low; partially cover and simmer 45 minutes. Top each serving with sour cream and fresh dill.
