Herb-Marinated Grilled Halibut

Ingredients

  • 2 tablespoons finely chopped fresh herbs (such as basil, tarragon and/or dill)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon olive oil
  • 2 garlic cloves, minced
  • 4 (4-oz.) halibut steaks
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarse ground black pepper

    In small bowl, combine herbs, lemon juice, oil and garlic; mix well. Place halibut on large plate. Sprinkle fish with salt and pepper; spoon herb mixture over fish. Let stand at room temperature for 15 minutes to marinate.

    Meanwhile, heat grill.When ready to grill, place fish on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 12 minutes or until fish flakes easily with fork, turning once. If desired, sprinkle fish with additional chopped fresh herbs before serving.

  • Fresh herbs add pizzazz to a mild-flavored fish like halibut. To further heighten their impact, save the herb stems after chopping the leaves, and lay the stems on the hot coals.
  • To broil halibut, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.
