The chicken can be grilled up to two days ahead of time, refrigerated and served cold.
This fragrant herbed chicken works well as a picnic meal. Be sure to keep it cold until mealtime in a well-insulated cooler, along with plenty of thirst-quenching beverages. Take along sandwich rolls and carrot and celery sticks in self-sealing plastic bags. For a simple picnic dessert, try kiwi fruit the way it's often served in its native New Zealand: Cut the rinsed fruit in half, and eat the green flesh right out of the skin with a spoon.
