Greek Pocket Chicken Sandwiches

Ingredients

  • 1 (8-oz.) container plain yogurt
  • 2 teaspoons chopped fresh mint
  • 1/2 teaspoon dried Greek seasoning
  • 1 small cucumber
  • 1 Italian plum tomato
  • 1/4 cup purchased hummus
  • 2 (6-inch) pita (pocket) breads, halved
  • 6 oz. refrigerated grilled chicken breast strips (from 9-oz. pkg.)

    In medium bowl, combine yogurt, mint and Greek seasoning; blend well. Set aside.

    Cut cucumber in half crosswise; cut each half into 4 lengthwise slices. Cut tomato into 8 lengthwise slices.
  • 3
    Spread hummus inside each pita bread half. Layer chicken, cucumber and tomato inside halves. Serve with yogurt mixture.

  • Greek seasoning contains oregano, onion powder and parsley. Look for it in the spice section of the grocery store.
  • Add cut-up pitted kalamata olives to the sandwiches or serve the olives as a side dish.
  • For a quick dessert, purchase individual cookie crumb crusts, fill them with sliced fruit and top them with whipped cream.
