Greek Minestrone Soup

Ingredients

  • 1/2 lb. lean ground beef
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 cup frozen mixed vegetables
  • 1/2 cup uncooked orzo (rice-shaped pasta)
  • 2 teaspoons chopped fresh oregano or 3/4 teaspoon dried oregano leaves
  • 1 (15-oz.) can garbanzo beans, drained, rinsed
  • 1 (14.5-oz.) can diced tomatoes, undrained
  • 1 (14-oz.) can ready-to-serve beef broth
  • 1 (8-oz.) can tomato sauce

    In large saucepan, cook ground beef, onion and garlic over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.

    Add all remaining ingredients; mix well. Bring to a boil over medium-high heat. Reduce heat to medium; simmer 5 to 10 minutes or until orzo is tender, stirring occasionally.

  • In Italian, "minestrone" means "big soup." Traditional Italian minestrone is thick vegetable soup made with pasta and beans or peas. Liberally garnished with grated parmesan cheese, minestrone is hearty enough to stand alone as dinner. Our Greek-style minestrone calls for orzo pasta and oregano.
  • The remaining 1/2 pound of ground beef can be wrapped and frozen for later use in Beef and Bean Wraps, Supreme Beef Pizza or Pasta and Burger Beer Cheese Soup.
  • For more Greek flavor, crumble feta cheese over the piping-hot soup just before serving.
