1Heat oven to 375°F. Lightly grease cookie sheet with shortening or cooking spray.
2In 10-inch skillet over medium heat, cook bacon until crisp. Remove from skillet with slotted spoon; drain on paper towels. Cook potato and onion in bacon drippings over medium heat until tender; drain on paper towels. In medium bowl, mix potato mixture and cooked bacon.
3Separate dough into 8 biscuits. Press or roll each to form 6-inch round. Place on cookie sheet. Spoon about 1/4 cup bacon mixture onto center of each round. Fold dough in half over filling; press with fork to seal.
4Bake about 15 minutes or until golden brown. Cool 5 minutes; serve warm.
