Fruity Ice Pops

Ingredients

  • 1 box (4-serving size) strawberry- or cherry-flavored gelatin (or any red flavor)
  • 1 package (0.14 oz) strawberry- or cherry-flavored unsweetened soft drink mix (or any red flavor to match red gelatin)
  • 1 box (4-serving size) berry blue-flavored gelatin
  • 1 package (0.14 oz) berry blue-flavored unsweetened soft drink mix
  • 2 cups sugar
  • 4 cups boiling water
  • 4 cups cold water
  • 16 paper lollipop sticks

    In large heatproof pitcher, mix red gelatin, red soft drink mix and 1 cup of the sugar. Pour 2 cups of the boiling water over mixture and stir until dissolved. Stir in 2 cups of the cold water. Pour mixture evenly into 8 (3- to 5-oz) paper cups.

    Rinse out pitcher. In pitcher, mix blue gelatin, blue soft drink mix and remaining 1 cup sugar. Pour remaining 2 cups boiling water over mixture and stir until dissolved. Stir in remaining 2 cups cold water. Pour mixture evenly into 8 (3- to 5-oz) paper cups.

    Freeze cups until slightly firm. Insert 1 lollipop stick into each cup. Freeze until firm, 8 hours or overnight.

  • If you have freezer pop molds, you can use them instead of paper cups. Keep in mind that mold sizes vary, so you may not get 16 fruit ice pops from this recipe.
  • Use other flavors of gelatin and soft drink mix to make Fruity Ice Pops in other colors. You can even match them to the theme of your event or use the guest of honor's favorite colors.
  • Find lollipop sticks at craft stores or wherever cake-decorating supplies are sold.
