cup chopped fresh parsley

cup freshly grated Parmesan cheese

cup red wine vinegar

cup olive or vegetable oil

Expert Tips

The chewy, meatlike texture of mushrooms makes them an excellent meat replacement. Some mushrooms, such as portobello, shiitake, oyster and porcini, have a meatier texture than regular white mushrooms.
