French Onion Soup Waffles

Ingredients

cups thinly sliced sweet onions (about 1 1/2 lb)

teaspoons finely chopped garlic

teaspoons chopped fresh thyme leaves

cups Progresso™ beef flavored broth (from 32-oz carton)

can (16.3 oz) Pillsbury™ Grands!™ Flaky Layers Refrigerated Biscuits Buttermilk

cups shredded Gruyère or Swiss cheese (6 oz)

    In 12-inch nonstick skillet, heat butter over medium-high heat. Add onions, garlic, 3 teaspoons of the thyme, the salt and pepper. Cook 10 to 12 minutes, stirring occasionally. Reduce heat to medium; cook 10 to 14 minutes, stirring constantly, until onions are caramelized.

    Remove 1/2 cup of the onions from skillet; set aside. Add beef broth to remaining onions in skillet; simmer 2 to 3 minutes, scraping up brown bits in skillet. Cover and keep warm.

    Heat nonstick waffle maker on medium setting. Separate dough into 8 biscuits; split each in half with serrated knife to make 16 rounds; press each into 4-inch round. Spoon about 3 teaspoons of the reserved onion mixture onto 8 of the rounds, and add 1 tablespoon cheese to within 1/4 inch of edge. Place another biscuit round on top of onion-topped rounds, and pinch edges together.

    Place in center of waffle maker, and cook about 2 minutes or until golden brown; remove from waffle maker to large cookie sheet. Repeat for remaining waffles.

    Move oven rack to 6 inches from top. Heat oven control to broil. Before serving, top each waffle with 2 tablespoons shredded Gruyère cheese; broil 1 to 2 minutes, watching carefully, until cheese is melted. Serve warm with heated broth and onion mixture. Garnish with remaining 1 teaspoon chopped thyme. Serve warm.
  • Thinly slicing your onions helps to better caramelize them.
  • Cleanup is a breeze when you wrap a paper towel around the end of a wooden kitchen utensil, like the wooden handle of a spatula. Push the paper towel through the waffle grates to help clean up any residue from baking.
