Cranberry-Raspberry Pears

Ingredients

large pears, peeled, halved and cored
1
cinnamon stick

cups raspberry-cranberry drink
1
tablespoon cornstarch
2
tablespoons white vanilla chips

teaspoon oil

cup fresh raspberries, if desired

    In medium saucepan, combine pear halves, cinnamon stick and raspberry-cranberry drink. Cook over medium heat for 5 to 10 minutes or until pears are slightly tender. Cool slightly. Cover; refrigerate at least 2 hours or until pears are pink.

    Remove pears from saucepan. Reserve 1 cup liquid in saucepan; stir in cornstarch. Cook over medium heat until mixture boils, thickens and becomes clear. Boil 1 minute, stirring constantly. Return pears to saucepan; cover and refrigerate at least 4 hours or until cold.

    Just before serving, in small saucepan, combine chips and oil. Melt chips over very low heat, stirring occasionally.

    To serve, place pear halves on individual dessert plates. Spoon sauce over and around pears. Drizzle each with melted chips. Top with raspberries.

Expert Tips

  • Bosc pears, with their firm texture, are a good choice for this poached dessert. The fruit takes on a rosy tinge from the raspberry-cranberry juice poaching liquid.
