Cranberry Oatmeal Cookies

cup butter or margarine, softened

cup granulated sugar

cup packed brown sugar

cup buttermilk*

cups all-purpose flour

teaspoon baking soda

teaspoon ground cinnamon

teaspoon ground nutmeg

teaspoons grated orange peel

cups quick-cooking oats

cups chopped fresh or frozen cranberries, thawed**

cup chopped walnuts

    Heat oven to 375°F. Grease cookie sheets with shortening. In large bowl, beat butter, granulated sugar and brown sugar until light and fluffy. Add buttermilk and eggs; beat well. Add flour, baking powder, baking soda, cinnamon, salt, nutmeg and orange peel; blend well. Add oats; mix well. Fold in cranberries and walnuts.

    Drop by rounded teaspoonfuls onto cookie sheets.

    Bake 8 to 10 minutes or until golden brown around edges. Cool 1 minute before removing from cookie sheets. Cool completely.

  • *To substitute for buttermilk, use 1 1/2 teaspoons vinegar or lemon juice plus milk to make 1/2 cup.
  • **To chop cranberries in food processor, place in processor bowl with metal blade. Cover; process with 10 on-and-off pulses or until all berries are coarsely chopped.
  • Try creamy white chocolate chunks or white vanilla baking chips in place of the walnuts.
