Ingredients

SALAD

cup uncooked couscous

cups shredded cooked chicken

cup chopped green bell pepper

cup sliced celery
1/2
cup shredded carrot

green onions, sliced

DRESSING

1/3
cup orange juice
1/3
cup oil
1/4
cup chopped fresh parsley

tablespoons lemon juice
2
tablespoons soy sauce
1
teaspoon finely chopped gingerroot or 1/4 teaspoon ground ginger
Dash salt
1/8
teaspoon pepper

    Cook couscous as directed on package. Uncover; cool 20 minutes.

    In large bowl, combine couscous and all remaining salad ingredients; toss gently.

    In small jar with tight-fitting lid, combine all dressing ingredients; shake well. Pour dressing over salad; toss gently. Cover; refrigerate 1 to 2 hours to blend flavors. If desired, serve on lettuce-lined plates.
