Cottontail Donut Poppers

Ingredients

cups vegetable oil for frying
1
can (16.3 oz) Pillsbury™ Grands!™ refrigerated Southern Homestyle Buttermilk biscuits
2 1/2
cups powdered sugar
3
to 4 tablespoons milk
1/2
teaspoon vanilla
4
cups sweetened flaked coconut

    In 2-quart heavy saucepan, heat oil over medium heat to 350°F. Separate dough into 8 biscuits. With 1 1/4-inch round cutter, cut 4 rounds from each biscuit.

    Gently place 4 biscuit rounds in hot oil. Fry on one side until golden brown. With tongs, gently turn each biscuit popper over; fry until other side is golden brown. Remove doughnut poppers from oil onto cooling rack. Repeat with remaining biscuit rounds.

    In medium bowl, mix powdered sugar, 3 tablespoons of the milk and the vanilla. Add remaining milk 1 teaspoon at a time until smooth and thin glaze consistency. Place coconut in shallow dish. Dip each donut popper into glaze, shaking excess off, and roll in coconut. Place on waxed paper and allow to set, about 10 minutes.

    Store in covered container at room temperature.

Expert Tips

Instead of coconut, roll glazed donut holes in shaved vanilla almond bark or shaved white chocolate. Or try rolling them in powdered sugar without glazing.

Fry the scraps until golden brown, and sprinkle with powdered sugar, or sprinkle with a cinnamon and sugar mixture.

If you don’t have a 1 1/4-inch cookie cutter, try using a small lid, such as the top of a sprinkle container.
