For the best flavor and color, choose ripe mangoes; look for skins that are yellow with blushes of red. To save time, look for precut fresh mango or refrigerated jarred mango in the produce section of your favorite grocery store.
To toast coconut, heat in ungreased heavy skillet over medium-low heat 6 to 14 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.
