Chicken Waldorf Salad

Ingredients

  • 1 cup cubed deli rotisserie chicken breast (from 3- to 3 1/2-lb chicken)
  • 1 medium unpeeled apple, cubed (1 cup)
  • 1 medium stalk celery, sliced (1/2 cup)
  • 1/2 cup red seedless grapes, cut in half
  • 1/4 cup slivered almonds, toasted*
  • 2 tablespoons refrigerated coleslaw dressing
  • 2 leaf lettuce leaves
  • 1 tablespoon thinly sliced chives

    In large bowl, mix all ingredients except lettuce and chives.

    Place 1 lettuce leaf on each of 2 serving plates; spoon salad onto lettuce. Sprinkle with chives.

  • After making this Chicken Waldorf Salad, about 2 cups of dark meat from the legs and thighs of the rotisserie chicken will remain. Try making this recipe for Chicken and Vegetable Chowder to use it up.
  • The iconic Waldorf salad became popular among socialites dining at the upscale Waldorf Hotel in the 1890s.
  • To toast nuts, sprinkle into an ungreased heavy skillet. Cook nuts over medium heat for 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. To toast nuts in the oven instead, spread nuts in an ungreased shallow pan. Bake at 350°F for 6 to 10 minutes, stirring occasionally until light brown.
