Rotisserie chicken pairs up with chicken taco seasoning mix and tomatillo salsa served up in whole wheat boats for an easy new favorite on taco night.

Ingredients

cup sour cream

tablespoon fresh lime juice

teaspoon chopped canned chipotle chile in adobo sauce

cup sliced onion

cups shredded deli rotisserie chicken

package (0.85 oz) Old El Paso™ chicken taco seasoning mix

tablespoons coarsely chopped fresh cilantro

Steps

  • 1 In small bowl, mix sour cream, lime juice, chipotle chile and salt; stir to blend. Set aside.
  • 2 In 10-inch nonstick skillet, heat oil over medium-high heat. Add onion; cook 4 to 6 minutes, stirring occasionally, until onion is tender. Stir in chicken, seasoning mix, water and salsa; toss until well coated. Heat to simmering; cook uncovered 5 to 6 minutes, stirring frequently, until chicken is heated through.
  • 3 Meanwhile, heat boats as directed on package. Divide chicken mixture among boats; add diced tomato, drizzle with chipotle cream, and top with cilantro. Add Make it FRESH toppings.
