medium cucumber, seeded, shredded

BURGERS

lb. ground chicken
1/4
cup Italian style bread crumbs

tablespoons nonfat plain yogurt

teaspoons prepared horseradish

burger buns, split

leaves lettuce

    GRILL DIRECTIONS: In small bowl, combine all relish ingredients. Cover; refrigerate while preparing burgers.

    Heat grill. In large bowl, combine ground chicken, bread crumbs, yogurt and horseradish; mix well. Shape mixture into 6 patties. When ready to grill, place patties on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 12 minutes or until no longer pink in center, turning once.

    Toast burger buns on grill, cut side down, during last few minutes of cooking time. Place lettuce leaf on bottom half of each bun; top each with burger, relish and top half of bun.

Expert Tips

  • The cucumber relish, made tangy with vinegar, also makes a fine accompaniment for grilled steak or fish.
  • Ground chicken, an increasingly popular alternative to ground beef, is as versatile as hamburger but less fatty, and its mild flavor makes it a good foil for a wide range of seasonings. Ground chicken breast is even leaner. It has 3 grams of fat per 3 ounces cooked, compared to about 7.5 grams for ground chicken and 15 grams for 80% lean ground beef.
  • Broiler Directions: 1. Prepare relish and patties as directed above. Place patties on broiler pan. 2. Broil 4 to 6 inches from heat for 8 to 12 minutes, or until no longer pink in center, turning once. Toast burger buns, cut side up, during last few minutes of cooking time. Serve burgers as directed above.
