Caramelized Apples and Ice Cream

Ingredients

  • 2 medium Granny Smith apples
  • 2 tablespoons butter
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup sweetened dried cranberries
  • 1/8 teaspoon cinnamon
  • 2 tablespoons apple juice
  • 2 tablespoons apple brandy or brandy, if desired
  • 1 pint (2 cups) Vanilla Ice Cream

    Peel and core apples. Cut into thin slices; cut each slice in half crosswise. Melt butter in medium skillet over medium heat. Add apples; cook 2 minutes, stirring frequently.

    Add brown sugar, cranberries, cinnamon, apple juice and brandy; cook 6 to 8 minutes or until apples are tender and sauce is of desired consistency, stirring occasionally.

    To serve, spoon ice cream into individual dessert dishes. Spoon apple mixture over ice cream.

  • Green, crisp and slightly tart, Granny Smith apples hold their shape well when cooked; they are good for baking as well as eating.
  • Try cinnamon ice cream in place of the vanilla ice cream.
  • Prepare the caramelized apples in advance. Cover and refrigerate them in a microwaveable container for up to 4 hours. To serve, uncover the container and microwave the apple mixture on HIGH for 2 to 3 minutes or until hot, stirring the contents every 30 seconds.
