1In medium bowl, combine eggs, chives, milk, salt, thyme and pepper; beat well. Set aside.
2Spray 10-inch nonstick skillet with nonstick cooking spray. Add bell pepper; cook and stir over medium heat for 1 minute. Add potatoes; cover and cook 8 to 10 minutes or until potatoes begin to brown, stirring frequently. Stir in Canadian bacon; cook and stir 1 to 2 minutes or until heated.
3Add egg mixture to skillet; cover and cook over medium-low heat for 6 to 9 minutes or until set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet.
4Sprinkle with cheese. Cover; cook an additional 1 minute or until cheese is melted. To serve, cut into wedges.
