Cajun Chicken Salad

Ingredients

Dressing

  • 2 tablespoons cider vinegar
  • 2 to 3 teaspoons dried Cajun seasoning
  • 1/3 cup vegetable oil

Salad

  • 1 package (9 oz.) frozen diced cooked chicken breast, thawed
  • 1 cups cold cooked rice
  • 3 stalks celery, diced (1 cup )
  • 6 medium green onions, chopped (1/3 cup)
  • 1 large tomato, diced (1 cup)
  • 1 medium green bell pepper, diced (1 cup)

    In small bowl, combine vinegar and Cajun seasoning; mix well with wire whisk. Gradually beat in oil until well blended.

    Add salad ingredients; toss to coat. Serve immediately, or cover and refrigerate until serving time.

  • With a little planniing ahead you can have cooked rice in the refrigerator ready to go. When you are cooking rice, add an extra cup of uncooked rice to the pot so you have 2 cups of leftover rice. Or, stop at an Asian restaurant and buy 2 cups of cooked rice.
