Ingredients

boneless skinless chicken breasts

teaspoons olive oil or vegetable oil

teaspoon dried Cajun seasoning

bag (10 oz) complete Caesar salad mix

Spray broiler pan with cooking spray. Brush chicken breasts with oil; sprinkle with 1/2 teaspoon of the Cajun seasoning. Place on pan.

Broil 4 to 6 inches from heat 10 to 12 minutes or until juice of chicken is clear when center of thickest part is cut (170°F), turning once.

Meanwhile, on large platter, arrange salad mix and croutons from packet. Slice cooked chicken breasts diagonally; arrange on top of salad. Add remaining 1/2 teaspoon Cajun seasoning to dressing from packet; drizzle over salad.

Expert Tips

Cajun seasoning is a complex blend of herbs and spices that includes three kinds of pepper, thyme, oregano, bay leaf, garlic and onions. It's an easy way to add the zesty Cajun flavor popularized by Chef Paul Prudhomme.
To substitute for the Caesar salad mix, use 4 cups of torn romaine lettuce leaves, 1/3 cup Caesar dressing, 1/4 cup Parmesan cheese and 1 cup croutons.
