Broiled Lemon-Pepper Salmon

Ingredients

  • 1 salmon fillet (1 lb)
  • 2 tablespoons salad dressing or mayonnaise
  • 1 teaspoon lemon-pepper seasoning
  • 1/4 teaspoon ground mustard

    Set oven control to broil. Spray rack in broiler pan with cooking spray. Place salmon, skin side up, on rack in pan.

    Broil 4 to 6 inches from heat 7 minutes. Turn salmon; broil 7 to 9 minutes longer or until fish flakes easily with fork.

    Meanwhile, in small bowl, mix remaining ingredients.

    Spread salad dressing mixture over salmon; broil 1 to 2 minutes longer or until topping is lightly browned and bubbly.

  • Don't have ground mustard on hand? You can substitute 3/4 teaspoon yellow mustard for the ground mustard.
  • Garnish with lemon slices on the side to spritz fresh lemon juice on the fish just before eating.
