lb. lean ground beef

(14.5-oz.) can diced tomatoes with green chiles, undrained

(10 3/4-oz.) can condensed cream of onion soup

(1.25-oz.) pkg. taco seasoning mix

(5- or 6-inch) corn tortillas, cut into 1/2-inch strips

cup sour cream

oz. (1 cup) shredded Cheddar cheese

tablespoons sliced green onions

    Cook ground beef in large skillet over medium heat until thoroughly cooked, stirring frequently. Drain.

    In 3 1/2- to 5-quart slow cooker, combine ground beef, tomatoes, soup, taco seasoning mix and water; mix well. Add tortilla strips; stir in gently.

    Cover; cook on low setting for 7 to 8 hours.

    About 5 minutes before serving, spread sour cream over casserole. Sprinkle with cheese. Cover; let stand about 5 minutes or until cheese is melted. Sprinkle with onions.

Expert Tips

An easy way to get the kids involved in the cooking process is to let them cut the corn tortillas into strips. If they're not old enough to use a knife, they can use a pair of clean scissors. Don't worry if the strips aren't exactly the same size-they'll be close enough.
