Ingredients

lb. lean ground beef
1 1/2
cups frozen whole kernel corn
1
can (19-oz.) or 2 cans (10-oz.) enchilada sauce
1
(4.5-oz.) can chopped green chiles
1
(6-oz.) pkg. corn tortillas, cut into 1/2-inch strips
2
oz. (1/2 cup) finely shredded Cheddar cheese

    Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Brown ground beef in large nonstick skillet over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain. Add corn, enchilada sauce and green chiles; mix well.

    Spoon 1/4 of beef mixture into sprayed baking dish. Top with 1/3 of tortilla strips. Repeat layers 2 times, ending with beef mixture. Cover with foil.

    Bake at 375°F. for 40 minutes. Uncover; sprinkle with cheese. Bake an additional 5 minutes or until casserole is bubbly and cheese is melted.

Expert Tips

  • Chiles vary widely in their heat level. For good flavor without the heat, look for cans marked "mild." For those who like it hot, you could pass a shaker of hot pepper flakes or a bottle of hot pepper sauce at the table.
