Barley, Bacon, Lentils and Tomatoes

Ingredients

slices bacon

small onion, thinly sliced

cup dried lentils, rinsed
1
cup uncooked quick-cooking barley

teaspoons beef-flavor instant bouillon

teaspoon cumin
1/8
teaspoon allspice
3 1/2
cups water
1
(14 1/2-oz.) can stewed tomatoes, undrained

tablespoons chopped fresh parsley

    In 12-inch skillet, cook bacon over medium heat until crisp. Remove bacon from skillet; drain on paper towel. Set aside.

    Add onion and lentils to bacon drippings in skillet. Cook over medium heat for 3 to 5 minutes or until onion is tender and lentils are lightly browned.

    Add barley, bouillon, cumin, allspice and water. Bring to a boil. Reduce heat to medium-low; cover and simmer 15 minutes or until lentils are soft.

    Add tomatoes. Cook uncovered for an additional 15 to 20 minutes or until lentils and barley are tender and liquid is absorbed.

    Just before serving, stir in parsley. Crumble bacon over top.
