Bacon and Sweet Potato Biscuit Bake

Sweet potatoes tossed in Sriracha sauce give this biscuit bake a spicy kick.

Ingredients

cups (1/2-inch cubes) sweet potatoes (about 18 oz)

tablespoons olive oil

tablespoon Sriracha sauce

lb bacon, crisply cooked and crumbled

cup shredded Cheddar cheese (4 oz)

can (16.3 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated Original biscuits

Steps

  • 1 Heat oven to 350°F. Spray 13x9-inch baking dish with cooking spray; set aside. Place sweet potatoes on ungreased 15x10x1-inch pan. In small bowl, beat oil and Sriracha sauce with whisk. Drizzle mixture on top of sweet potatoes; toss to coat evenly.
  • 2 Bake 25 to 30 minutes or until sweet potatoes are tender. Cool 5 minutes.
  • 3 Meanwhile, in large bowl, beat eggs, milk and salt with whisk until well combined. Stir in sweet potatoes, bacon and 3/4 cup of the cheese.
  • 4 Arrange biscuits in baking dish. Pour egg mixture over biscuits.
  • 5 Bake 28 to 32 minutes or until biscuits are golden brown. Cover with foil; bake 10 minutes longer. Sprinkle remaining 1/4 cup shredded Cheddar cheese over biscuits; let stand 5 minutes before cutting.

Expert Tips

Don't like spice? Omit the Sriracha sauce and roast the sweet potatoes in olive oil.
