Asian Noodle Soup

cups chicken broth
1 1/2
cups cubed cooked chicken

teaspoon sugar

teaspoons soy sauce

oz. uncooked thin Chinese wheat noodles, broken into pieces (3/4 cup)*

cup quartered fresh pea pods**
2
green onions, thinly sliced

    In large saucepan, combine chicken broth, chicken, sugar and soy sauce.Bring to a boil.

    Add noodles and pea pods. Boil 3 to 5 minutes or until noodles and peapods are tender. Sprinkle each serving with green onions.

Expert Tips

* Do not use chow mein noodles. Thin Chinese wheat noodles can be found in the oriental section of large supermarkets. ** One 6-oz. pkg. frozen pea pods can be substituted for fresh pea pods.

This recipe calls for Chinese noodles--thin wheat noodles that cook very quickly and are eaten hot or cold throughout Asis. Do not substitute crunchy fried chow mein noodles. You may, however, substitute angel hair pasta.

One cup of frozen regular peas can take the place of the snow peas or sugar snap peas.

Serve the soup in Chinese soup bowls with ceramic spoons, available in Chinese grocery shops. Asian specialty shops. Sprinkle some minced green onion over each serving.
