MARINADE

tablespoons soy sauce

tablespoons dry sherry

teaspoon grated gingerroot

garlic cloves, minced

(4-oz.) halibut steaks (3/4 to 1 inch thick)

    GRILL DIRECTIONS: In 12x8-inch (2-quart) baking dish or resealable foodstorage plastic bag, combine all marinade ingredients; mix well. Place halibut in marinade; turn to coat. Cover dish or seal bag. Refrigerate 4 to 6 hours to marinate, turning occasionally.

    Heat grill. When ready to grill, generously oil wire grill basket or carefully oil grill rack. Remove fish from marinade; reserve marinade. Place fish in well-oiled grill basket or directly on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 14 minutes or until fish flakes easily with fork, turning once and brushing frequently with marinade. Discard any remaining marinade.

Expert Tips

  • Halibut's mild flavor is a good foil for this Asian-inspired ginger-soy marinade. The fish's firm texture makes it especially well-suited to grilling because it can be turned without crumbling. Even so, we recommend you oil the grill rack or basket to prevent sticking.
  • To broil halibut, place on oiled broiler pan; broil 4 to 6 inches from heat using times above as a guide and brushing frequently with marinade.
