In dried form, figs are available all year. But I was ecstatic to see fresh figs reappear in my local market. They are lush additions to late-summer and early-fall cooking in my kitchen. To celebrate, I decided to recreate a delicious flatbread I tasted in Napa last year. It is a crisp flatbread topped with a double dose of both fresh and dried figs, creamy goat cheese, caramelized onions and crisp bacon.
Growing up as a picky eater, I did not have figs on my list of foods to eat. As I began to cook, many of those foods from the "never will I eat list" jumped over to my favorites. I'm more adventurous when I am in the kitchen. If you have a picky eater, see if they'll try new flavors when cooking.
Flatbreads make a great snack, an appetizer or even a meal. With Pillsbury Thin Crust Pizza dough, you can have a warm and crispy flatbread in under half an hour.

Sliced peaches, prosciutto and marcona almonds
Fresh tomatoes, burrata cheese and fresh basil
Olive oil, sea salt and chopped fresh herbs
A sprinkling of sugar, chopped dark chocolate, raspberries and marshmallows
