Let’s talk about birthdays, shall we? I’m not someone who usually craves the limelight, preferring instead to sit back and let others steal the show. But when it comes to my birthday, my desire for celebration knows no bounds. The bigger to-do, the better. A month of festivities? Bring it on. Presents? Uh, of course. Tiara for the special day? Don’t tempt me.

Birthday Cinnamon Rolls

If none of that were to happen, though, I’ll survive. But there’s absolutely, positively one thing I can’t do without: a candle in my birthday dessert. No need for anything ostentatious – a single flame will do – but it must be there. (These Birthday Cinnamon Rolls show how it should be done.)

Almost as important as the candle is what it’s attached to. I love mixing it up: cupcakes one year, crème brûlée the next. With my birthday just around the corner, I’m seriously thinking about what this year’s pick should be. Here are a few options that are festive enough to say “birthday” but easy enough for even non-bakers to make (hint, hint to my friends and family). Why not dive in Pillsbury-style?

Chocolate Chip Cheesecake Bars

I love love love cheesecake. But it can be a bit time-consuming to make. These Chocolate Chip Cheesecake Bars are the perfect solution. They layer a creamy filling in between a cookie crust and crumbled cookie topping and take only 10 minutes to prep. Another option is these Peanut Butter-Toffee Cheesecake Brownies.The peanut butter, cream cheese and chocolate make a perfect trifecta of yum.

Doughnut Hole Pops

Doughnuts on a stick? Now there’s a treat made for parties. I love the colorful sprinkles used as decoration, although I wouldn’t be opposed to dressing them up with edible glitter instead for a little sparkle. Popping a candle in the top of one of them adds to the fun.

Cake Batter Monkey Bread

Sprinkles again, but this time they’re scattered over an irresistible Cake Batter Monkey Bread. The monkey breads are baked in mini soufflé dishes, so they’re especially adorable. (If you don’t have those, no worries. Regular-size muffin cups work as well; just watch the baking time.)
