These beautiful and tasty cookie cups are elegant enough to serve for a big day, like a wedding or an engagement party. The best part? They are super simple to make. I just love the blush pink color. There is no need to spend a fortune having a baker or pastry chef make little desserts for the party tables. These can be made in advance and taste even better than they look.

Pillsbury® Ready to Bake!™ refrigerated sugar cookies make the best base for these cups.

You can bake them in a mini muffin tin and then use the end of a wooden spoon to press an indentation into them.

The pink champagne buttercream frosting makes these cups elegant and delicious. The combination of the butter and champagne is so unique. If you don’t want to use alcohol, you can substitute sparkling grape juice for the champagne and still get a similar flavor.

Once the cups are cool, they are ready to be frosted and decorated.

I picked up some tiny white pearls in the cake decorating aisle at the craft store. They make the cookie cups beautiful. You won’t believe that something that looks so special and tastes so yummy could be so easy to make!
