Salted Caramel Eggnog Cheesecake Cookie Bars
Add some Christmas cheer to dessert with these eggnog-infused cheesecake bars.

One thing I always look forward to each holiday season is eggnog —the perfectly spiced flavor and the nostalgic memories it brings of spending Christmas with my family. If you love eggnog as much as I do, you will adore these Eggnog Cheesecake Cookie Bars. With just a few simple ingredients and easy steps, you can create a delicious and festive treat for your holiday table.

Start by pressing half of a package of Pillsbury sugar cookies into your prepared baking pan to create the bottom of the bar. Not only will the dough serve as the sturdy crust, but also as the crumble top.

Using a hand mixer or stand mixer, beat together the cream cheese, eggnog, sugar, one egg yolk and a bit of cinnamon. Next, pour the cheesecake batter over the cookie dough bottom.

Then crumble the remaining cookie dough over the cheesecake mixture.

After 40 to 50 minutes in the oven at 350°F, or when the bars have turned golden-brown and bubbly, remove the pan to cool. Then top with a salted caramel sauce, made simply by mixing a cup of warmed caramel and a teaspoon of sea salt. Once you drizzle this over the top of the bars, you have created something truly special that will become your favorite new holiday dessert!
