Step 1: Prepare the Dough
Allow one package of Pillsbury Sugar Cookie dough to soften at room temperature for 10 minutes. Once it’s workable, mix with 3 ounces cream cheese, 1/4 cup flour, 1 teaspoon cinnamon and 1/2 teaspoon ground ginger.
Fit a decorating bag with a large star tip; fill with dough mixture. Using a circular motion, squeeze dough in 1 1/2- to 2-inch circles onto your cookie sheet, leaving 2 inches between each cookie.
Bake 12 to 14 minutes or until edges are golden brown; transfer to a wire rack and cool completely. In the bowl of an electric mixer, beat 3 ounces cream cheese, 1/4 cup softened butter, 1 tablespoon bourbon and 1/2 teaspoon cinnamon. Mix in 1 1/2 cups powdered sugar. Spoon a rounded tablespoon of the filling on top of half of the cookies. Top with the remaining cookies to make sandwiches.
