I started with an entire bag of Nature Valley Oats ‘n Dark Chocolate Granola, which is awesome for this snack since it has 10 grams of protein per serving! You can add other nutritional ingredients like chia seeds, flax seed or raisins, but I keep it basic and stuck to classic Monster Cookie staples. Here’s how you do it:
In a large mixing bowl, combine ½ cup peanut butter and 1/3 cup honey.
Use your hands to crush the cereal in the bag and ensure large pieces are broken up. Open the bag and pour into the mixing bowl along with the ½ cup M&Ms, ¼ teaspoon salt and ¼ cup chopped pecans. Gently mix with a wooden spoon.
Use your hands to shape the mounds into balls, if necessary. Refrigerate for 2 hours, or until firm. Store in an airtight container in the fridge for up to 1 week.
