What’s For Dinner Tonight: Enchilada Pizza

Enchilada Pizza
Double down on dinner with one easy-to-make dish that combines two family favorites—pizza and enchiladas.

Between tacos, burritos and enchiladas, Mexican food is on our family’s dinner table often. Pizza is another winner; anything with gooey cheese is always a hit. That’s when the idea of combining two of our favorite foods into one fabulous dish — Enchilada Pizza! — came to me.

Just grab a can of Pillsbury classic pizza crust  and top it with some Old El Paso mild enchilada sauce, Monterey Jack cheese, cooked shredded chicken and some freshly chopped cilantro. So flavorful, so easy!

Enchilada Pizza

Start by spreading the dough onto a greased 12-inch round pizza pan.

Bake pizza dough at 400°F for eight minutes, or until the crust is a light golden-brown. Then remove the partially baked crust from the oven and top it with ½ cup of enchilada sauce.

Top sauce evenly with shredded cheese, chicken and tomatoes.

Place the pizza back in the oven and bake for another eight minutes, or until the cheese is melted and bubbly. Remove it from the oven and top with chopped cilantro. Let it stand for five minutes to cool before slicing and serving. Enjoy!
