When I was growing up, as soon as we walked through the door after school, it was time for a snack. The same is true for my son. He gets home from school and is starving. So before homework starts, it’s always snack time. These granola clusters are one of his favorites. They are super easy to make, no baking required. Just a few ingredients and you have a treat everyone will love.

Chocolate-Peanut Butter Granola Bites

You start with a bag of the new Gluten Free Chex Granola Mix. I used Mixed Berry Granola, but the Honey Nut Granola would be just as delicious!

In a small sauce pan combine1/3 cup each of peanut butter, honey, and brown sugar. (This recipe is super-easy to remember as you need the same 1/3 cup of all of the ingredients!) Heat that on the stove until it boils. Boil for one minute.

Pour the honey mixture over 1 bag of the granola, and stir until everything is coated. I threw in a few chocolate chips (again 1/3 of a cup) because they always make everything better. Some of the chocolate melts and gives a little swirl.

Using a cookie scoop or two spoons, place clusters of the granola mixture onto a baking sheet lined with parchment paper or a silicone baking mat. You have the let the clusters cool completely before serving (the hardest part).

These granola clusters are sweet, chewy, and a little crunchy. All the makings of a perfect snack, or even lunchbox treat!
