Pear and Greens Salad with Maple Vinaigrette

I don’t know about you, but now that the holidays have come and gone, I’m in need of some clean and easy recipes to detox from all the cookies, cocktails and über-rich buffet bites I devoured. Simple solution? Salad. And a side of bread, of course. 

My natural inclination is to be baking casseroles, simmering slow-cooker meals and putting together hearty pastas. But there’s something about a simple salad and a side of bread that makes the perfect little meal. And even though there’s a blanket of snow outside here in Minnesota, there’s a surprising selection of in-season produce to freshen up any salad. I love using oranges, pears and pomegranates (like in this Winter Greens with Pomegranate Champagne Vinaigrette salad). Add an easy dressing, and you’ll have the perfect sauce to mop up with the bread. It’s a no-waste meal.
