Butter-Braised Radish Open-Face Sandwiches

We love radishes, but we never thought to cook them until recently. We gave them a try, and wow! Were we ever glad we did. Crisp, slightly bitter radishes become tender and slightly sweet when cooked. They are divine.

Not wanting to stray too far from the classic combo of radishes, salt and butter, we kept things really simple and came up with what we now consider to be the best lunch!

This sandwich comes together quite easily and quickly. For two people, you will need a bunch of radishes, thyme (fresh or dried), two eggs, green onion, butter, lemon, Parmesan cheese and two slices of hearty multi-grain bread.

Put the eggs in a small saucepan and cover with water; bring to a boil. Remove from the heat; cover and allow to sit for 10 minutes. Transfer the eggs to ice water until chilled; peel.

Get your radishes going while the eggs are standing. Add them to melted butter along with thyme. Cook the radishes for about 8 minutes until they are tender. Because we hate to waste, add some of the radish greens along with sliced green onion and cook for a minute until the greens are wilted.

Give everything a taste and season with a little salt and pepper. Then assemble these open-faced sandwiches by topping toasted bread with warm radishes, two egg halves, Parmesan cheese and a little lemon zest.
