We love radishes, but we never thought to cook them until recently. We gave them a try, and wow! Were we ever glad we did. Crisp, slightly bitter radishes become tender and slightly sweet when cooked. They are divine.
Not wanting to stray too far from the classic combo of radishes, salt and butter, we kept things really simple and came up with what we now consider to be the best lunch!
This sandwich comes together quite easily and quickly. For two people, you will need a bunch of radishes, thyme (fresh or dried), two eggs, green onion, butter, lemon, Parmesan cheese and two slices of hearty multi-grain bread.
