I like to vary my snacking routine pretty often. I get bored very easily and never like to have the same thing two days in a row, if I can help it. But I also don’t like to spend a lot of time cooking, particularly in the morning. The struggle is real.
That’s where these granola cookie cups come in; they’re so versatile you can mix up the filling and never get bored. If you fill them with yogurt and top with berries, I think they qualify as mid-morning snack you don’t have to feel guilty about eating. Or you could fill them with ice cream for an evening dessert.
Bonus: These cookie cups are super easy to make. Chocolate chip cookie dough is the base and Nature Valley Oats n’ Dark Chocolate bars give these cookies cups structure and a lot of crunch.
To start unwrap 3 of the Oats n’ Dark Chocolate granola bars. Use a food processor, a rolling pin, or even the bottom of a pan to crush the bars. You want them to still be in small clusters and not just crumbs.
Mix in 1 package of cookie dough with the crushed bars until well blended. Your hands work gets to get everything well incorporated.
Divide the dough evenly into 12 muffin cups sprayed with nonstick cooking spray. Press into the sides, leaving a well in the center.
Bake at 350f°F or 8-10 minutes, being careful not to over bake. They will look be a little under done in the center when you take them out, but as they cool in the pan, they will finish cooking. To enjoy for breakfast, fill with your favorite Yoplait yogurt and top with fresh berries. For dessert go all out with ice cream and hot fudge!
